It’s so long since I’ve done a blog post – nevermind an #MPM one – that WordPress virtually said “and YOU are?” as I logged in. That’s not to say I haven’t been meal planning, just that I haven’t made time to blog them. (I have, however, been Instagramming the crap out of my meals). No New Year’s crash diet for me, just a commitment to improve what my family and I are eating.
This week’s dinners are:
Peach Balsamic Rosemary Chicken
Slow Cooker Pineapple Pulled Pork
Sweet Potato Spinach Quiche
Slow Cooker Beef and Broccoli
Breakfast for Dinner (aka Brinner)
I’m even organised enough to plan lunches, which will either be left overs from the previous night’s dinner with salad, caprese salad with ham, curried chicken salad, or chicken and avocado salad. Breakfasts will be a super shake (including things like protein powder, spinach, chia seeds, flax, and frozen berries), leftovers, or scrambled egg with spinach, peppers and sweet potato.

I am going to try a new brownie recipe, and will also be making Anzac tray bake and probably rice crispy bars, because cakes have a habit of disappearing quickly in my house.

I am taking part in Zero Waste Week 2014 (you can read about it here) so this week’s menu is based around what I already had at home. Interestingly, my weekly shop came in at around £30 less than usual because I already have quite a lot of food in the pantry and freezer that I tend to overlook when doing my shopping list.
Chicken Kiev with cauliflower mash and carrots
Shepherd’s Pie with Sweet Potato & Cauliflower Topping
Spaghetti Bolognese with garlic bread
Savoury mince in a giant Yorkshire pudding
Wraps with homemade chicken nuggets, sweetcorn, carrots and cucumber (kids’ request)

Here we go again! Another week of healthy dinners coming up. While I didn’t stick religiously to last week’s meal plan I did follow it quite closely and am feeling much healthier as a result.
We’re out for dinner one night, but the rest of the week looks like this:

New week and a new meal plan. I haven’t planned for the past few weeks and, surprise surprise, really missed it. Why do I get lazy? It always costs me time and money as a result. This week’s meals are:
Chicken and mushrooms with polenta
One dish roast chicken, potatoes & veg
Homemade beef burgers with salad
Fridge frittata (that reliable staple!)
Cheesy beans and toast
Vegetable and quinoa soup
… and leftovers

Hello and welcome to a new month. Now we’re in February I hope the weather takes the hint and bucks up its attitude! This week’s menu is:
Cottage pie topped with cauliflower & butternut mash
Pork Steaks with sweet potato and spinach
Meat balls and courgette “spaghetti”
Omelettes and something… I will have to work on that one
left overs/freezer fun (fish fingers, nuggets, whatever)
My lunches are also pretty unhealthy lately so I will be making a pot of soup with quinoa and whatever veg I can find and taking that in a flask.
You may have noticed that it’s a pretty low carb menu and that’s because I am trying to improve my diet. I’m taking it one week at a time! Let me know what your fave healthy meals are and remember to check out Mrs M’s

Well, here we are at the start of another week and it’s fair to say I’m not feeling inspired. I’m envious reading other people’s blogs where they mention that their children eat everything they cook as if it wasn’t something extraordinary. My fussy kids are doing my head at meal times in at the moment and it’s either because a) I’m making a bit of a stand, or b) they are being taken over by Satan. Or both.
This week is:
Sunday – fish fingers and yellow rice for husband and youngest. Packet pasta and sauce with grated cheese, which I burned. No point jazzing it up. That’s what we ate.
Monday – Sweet and Sour Pork with peppers and rice
Tuesday – Meatloaf, potatoes, veg, gravy
Wednesday – Cheesy ham and veg pie
Thursday – Roast chicken with veg, gravy, stuffing and Yorkshire puddings (I am not a purist – Yorkshire puddings are good with any roast dinner
Friday – chicken and spinach curry
Saturday – Fridge frittata
I am baking
Chocolate and caramel brownies
ANZAC biscuit traybake
… that should last the week but if it doesn’t then I’ll bake a chocolate cake as well.
